This salad dressing is made rich by sun dried tomatoes and their oil. It's a lovely fresh herb dressing for a caprese-style salad but you can also toss it with pasta for a summer lunch.

Serves: 4 

  • 150g sun dried tomatoes in oil
  • olive oil, as/if required
  • a small bunch of basil
  • a small bunch of parsley
  • a small bunch of marjoram or oregano
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon capers
  • 1 clove garlic
  • black pepper, to taste

  1. Drain the sun dried tomatoes of their oil and place in a blender. Add 150ml oil from the jar (if there is not enough, top it up with olive oil).
  2. Add to the blender the basil, parsley, marjoram, vinegar, capers and garlic. Blend until pureed. Taste and season with pepper - it should not need salt as the capers tend to be salty.
