Making your own Thai curry paste is a satisfying experience and the flavours are so much brighter than paste out of a jar. Adjust chillies to taste but the traditional Thai style is hot!
15 fresh green chillies
3 tablespoons onion shallots, diced
1 tablespoon garlic
2 tablespoons galangal (or ginger), diced
1/2 tablespoon lemongrass, finely diced
1 teaspoon shrimp paste
1/2 teaspoon kaffir lime leaf, finely diced
1 teaspoon chopped coriander stems
1 teaspoon turmeric
- Combine all the ingredients in a food processor and process until smooth.
