Curry Paste

    Making your own Thai curry paste is a satisfying experience and the flavours are so much brighter than paste out of a jar. Adjust chillies to taste but the traditional Thai style is hot!

    Serves: 3 

    • 15 fresh green chillies
    • 3 tablespoons onion shallots, diced
    • 1 tablespoon garlic
    • 2 tablespoons galangal (or ginger), diced
    • 1/2 tablespoon lemongrass, finely diced
    • 1 teaspoon shrimp paste
    • 1/2 teaspoon kaffir lime leaf, finely diced
    • 1 teaspoon chopped coriander stems
    • 1 teaspoon turmeric

    1. Combine all the ingredients in a food processor and process until smooth.
