This recipe is so easy! Prawns are simply stir fried in a bright mix of Thai curry flavours. Served over rice and garnished with fresh coriander, it's the perfect light summer dinner.
Heat the oil in a wok or frying pan. When hot, add the garlic, onion and pepper and stir until fragrant, but don't burn the garlic.
Add the prawns, curry powder and chilli paste then stir well. Add the fish sauce, sugar, spring onions and cook until the prawns are just cooked through. Just before serving stir through the coriander.
