Thai Curry Prawns

    This recipe is so easy! Prawns are simply stir fried in a bright mix of Thai curry flavours. Served over rice and garnished with fresh coriander, it's the perfect light summer dinner.

    Serves: 2 

    • 2 teaspoons vegetable oil
    • 2 tablespoons garlic, minced
    • 4 tablespoons onion, minced
    • 1 teaspoon freshly ground black pepper
    • 200g prawns, peeled but tails on
    • 2 teaspoon curry powder
    • 2 tablespoons chilli paste
    • 2 tablespoons fish sauce
    • 2 teaspoons sugar
    • 2 tablespoons spring onion, diced
    • 4 sprigs fresh coriander leaves

    1. Heat the oil in a wok or frying pan. When hot, add the garlic, onion and pepper and stir until fragrant, but don't burn the garlic.
    2. Add the prawns, curry powder and chilli paste then stir well. Add the fish sauce, sugar, spring onions and cook until the prawns are just cooked through. Just before serving stir through the coriander.
