Pizza Stuffed Mushrooms

    Stuffed mushrooms can be fiddly but I like this simple recipe based on the topping ingredients for pizza, a great alternative if you are trying to avoid gluten.

    Serves: 4 

    • 4 large mushrooms or 16 small ones
    • 100g pizza sauce
    • 1 1/2 cups grated cheese
    • 1 cup favourite pizza toppings, diced onion, capsicum, ham, etc.
    • 1/4 cup fresh basil, sliced

    1. Preheat the grill to high.
    2. Remove the stalks of the mushrooms and dice. Place the mushrooms cap side up and grill until they start to crinkle.
    3. Add to each mushroom cup a smear of pizza sauce, a layer of sprinkled cheese; the finely diced pizza toppings and mushroom stems, then add the remaining grated cheese. Top with sliced basil.
    4. Place under the grill until the cheese is melted.
