Mum's Boiled Fruit Cake with Nuts

This recipe was given to me by my mother. When made it doesn't last long. My hubby loves it and it is delicious.

Makes: 1 cake

  • 500g mixed fruit
  • 1 cup water
  • 1 cup caster sugar
  • 150g butter
  • 1 teaspoon mixed spice
  • 1 teaspoon bicarb soda
  • 2 eggs, lightly beaten
  • 1 cup plain flour combined with 1 cup self raising flour
  • chopped nuts of any kind, e.g. walnuts, pecans, almonds
  • 1 tablespoon of any alcohol you may have (I use Scotch)
  • extra nuts for top of cake before baking

  1. Preheat oven 160 degrees C (fan forced oven). Grease and line a square tin with either greaseproof paper or baking paper.
  2. In a saucepan combine fruit, water, sugar, butter, mixed spice and bicarb soda. Stir over a low heat until the butter and sugar dissolves. Boil for 1 minute.
  3. Letting it cool, add the lightly beaten eggs and combined flours to the fruit then mix well. Add chopped nuts and 1 tablespoon alcohol.
  4. Pour mixture into prepared tin and place extra nuts on top of the cake. Cook in a slow oven for 1 3/4 hours or until skewer comes out clean when tested (this will depend on how fast your oven cooks).
  5. Let stand for 15 minutes in tin and then turn out onto a wire rack.


You can also use tinned crushed pineapple (450g) and delete the water. The cake can be iced if required .
