Want turkey for Christmas but don't feel like roasting a whole bird? This recipe is delicious and simple, giving you more time in the kitchen for other things. Also works with legs and shanks.


Serves: 2 

  • 1 turkey breast
  • 350ml orange juice
  • salt and pepper, to taste
  • 2 pinches dried thyme

  1. Preheat oven to 200 degrees C. Place the turkey breast in a casserole dish. Pour over the orange juice, then season it with salt and pepper and sprinkle the thyme over.
  2. Cover and roast about 2 hours, or until the meat is no longer pink inside. If the dish gets too dry, you can add water as it cooks.
