This is what I do with turkey that is leftover from Christmas. It's a simple recipe that involves ginger, spices and coconut milk. I like to serve this with quinoa.


Serves: 4 

  • 3 tablespoons olive oil
  • 500g white turkey meat, diced
  • 4 spring onions, sliced
  • 3 large carrots, peeled and diced
  • 150ml coconut milk
  • 4cm ginger, finely diced
  • 1/2 teaspoon turmeric
  • salt and pepper, to taste
  • coriander, to garnish

  1. Heat the oil in a saucepan and brown the turkey and spring onions. Add carrots, coconut milk, ginger, turmeric and salt and pepper to taste. Simmer 10 minutes and serve, garnished with coriander.
