Beetroot Salad with Marjoram

    Fresh marjoram really makes a difference to this beetroot salad recipe which is dressed with a simple cider vinaigrette. Enjoy!

    Serves: 4 

    • 600g beetroots
    • 2 tablespoons apple cider vinegar
    • 5 tablespoons extra virgin olive oil
    • 1 teaspoon black pepper
    • 3 tablespoons fresh marjoram, diced

    1. Place the beetroots in a saucepan of cold salted water and bring to the boil. Reduce heat and simmer about 45 minutes or until beetroot are tender. Drain, cool and slice.
    2. In a cup, combine the vinegar, olive oil, pepper and marjoram. Toss the beetroot with the dressing.
