A simple beetroot salad which I make quite often. You can also make it with roasted beetroot but I think the flavour is brighter with boiled.


Serves: 4 

  • 4 beetroots
  • 1 tablespoon olive oil
  • 2 tablespoons cider vinegar
  • 1/4 - 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon cumin
  • freshly ground black pepper, to taste

  1. Wash the beetroot thoroughly and place in a saucepan with water to cover. Cover and simmer on low hear 1 hour until easily pierced with a fork. Drain and cool slightly, then peel and cut into slices.
  2. Combine all the dressing ingredients and pour over the beetroot. Allow to chill 2 hours before serving.
