Homemade Mayonnaise for Potato Salad

    Homemade mayonnaise is just so much better on potato salads or with eggs. It's not hard to make, the trick is to add the oil very slowly while whisking.

    Makes: 1 1/2 cups mayonnaise

    • 2 organic egg yolks
    • 2 tablespoons vinegar or 1 tablespoon lemon juice
    • 1 teaspoon Dijon mustard
    • salt, to taste
    • 1 1/4 cups (300ml) olive oil

    1. In a small bowl, whisk egg yolks with 1/2 the vinegar or lemon juice and the mustard, until thick. Add a little salt to taste.
    2. Whisking constantly, add the oil drop by drop. After you've added about 2 tablespoons, pour in the rest of the oil in a thin stream while whisking. Add the rest of the vinegar or lemon juice and keep whisking until thickened.
