Spicy Soy Thai Salad Dressing

    A Thai salad dressing flavoured with chilli, garlic, rice wine vinegar, soy sauce and sesame oil. It's great over a chicken salad or a Thai beef salad.

    Makes: 1 cup dressing

    • 2cm fresh ginger, finely minced
    • 2 green chillies, seeded and finely minced
    • 2 cloves garlic
    • 2 teaspoons sugar
    • 4 tablespoons rice wine vinegar
    • 1/2 cup (125ml) soy sauce
    • 4 tablespoons peanut oil
    • 2 tablespoons sesame oil

    1. In a bowl, combine ginger, chillies, garlic, sugar, vinegar and soy sauce.
    2. Gradually whisk in the peanut oil and sesame oil. Taste and add salt and pepper if desired.
