Jazz up your usual salad dressing recipe with the addition of fresh green chillies. This dressing is great over mixed leafy greens but would also be good over Thai salad.
In a bowl, mix together the vinegar, cumin, salt and pepper. Cut the chillies in half, remove the seeds, cut into thin strips, then cut the thin strips into tiny dice. Add to the dressing.
Gradually whisk in the olive oil so that the dressing thickens. Finally, stir in the cilantro. Voila!
