Ham and Potato Salad

    A German style potato salad with a sour cream, mustard and caraway dressing. This would also be a good use for leftover ham after Christmas!

    Serves: 6 

    • 1.4 kg new potatoes
    • 1 small red onion, finely diced
    • 3 tablespoons red wine vinegar
    • 3 tablespoons sour cream
    • 2 tablespoons hot mustard
    • 2 teaspoons caraway seeds
    • 1 cup (250ml) vegetable oil
    • 10 sprigs parsley, roughly chopped
    • 150g thinly sliced ham, cut into strips

    1. Cook the potatoes in boiling water until tender, about 20 minutes. Drain.
    2. In a bowl, combine the red wine vinegar, sour cream and mustard. Season with salt and pepper and sprinkle in the caraway seeds. Whisk together, then slowly whisk in the oil.
    3. Thinly slice the potatoes and place in a salad bowl. Add the dressing and mix well. Mix in the ham and parsley.
