Potato Salad with Yoghurt Dressing

    A quick and lovely potato salad with a simple dressing of yoghurt and mayonnaise. I like to add cucumber and small cubes of smoked pork for taste and crunch.

    Serves: 6 

    • 1 1/2 kg waxy potatoes
    • 2 teaspoons salt
    • 2 teaspoons herb butter
    • 150g low fat yoghurt
    • 150g mayonnaise
    • dash milk
    • salt, pepper and sugar to taste
    • 1 cucumber, sliced
    • 200g smoked pork, cubed (optional)
    • chives, to garnish

    1. Cut the potatoes into small, uniform cubes. Put them in a large saucepan with two litres water, two teaspoons salt and two teaspoons herb butter (you can use plain butter if you like). Boil until just tender - because the potatoes are already diced this will happen quickly.
    2. To make the dressing, combine the yoghurt and mayonnaise in a bowl. Add a little milk and mix until it is nice and smooth, not too thick. Season to taste with salt, pepper and sugar if desired.
    3. Mix the potatoes, cucumber and dressing in a salad bowl. If adding pork, fry the cubes in a little butter first and let cool. Chill 2 hours before serving and sprinkle with chives.
