This potato salad recipe uses cooked deli-style sausage, either bologna or mortadella. It also contains raw egg, so make sure your egg is organic and very fresh.


Serves: 4 

  • 750g potatoes, boiled, cooled and cubed
  • 1 bologna or mortadella style sausage, diced
  • 4 gherkins, diced
  • 4 tablespoons tartar sauce
  • 1 fresh organic egg
  • 2 teaspoons sweet mustard
  • salt and pepper, to taste
  • vinegar, to taste

  1. Combine the potatoes, bologna and gherkins in a bowl.
  2. Whisk the tartar sauce with the egg and mustard. Toss the potatoes with the dressing, season with salt and pepper and a splash of vinegar to taste.
