Tarragon Vinegar Potato Salad


    This is a basic potato salad with added tarragon vinegar for extra zing. You can use different herb vinegars if you prefer, or add vegetables like radish or chopped lettuce.

    Serves: 2 

    • 600g waxy potatoes, unpeeled
    • 6 tablespoons tarragon vinegar
    • salt and pepper, to taste
    • 1 teaspoon hot mustard
    • 3 tablespoons vegetable oil
    • 1 medium onion, finely diced
    • 1 cup (250ml) hot beef or vegetable stock
    • chives, to garnish

    1. Boil the potatoes in their skins. Cool, peel and cut into slices while still warm.
    2. Mix the vinegar with salt, pepper, oil and mustard and stir until smooth. Stir in the hot stock and mix it all with the sliced potatoes. Adjust the seasoning to taste - you may want to add more vinegar. Sprinkle with chives.
