Green Tea Panna Cotta

    Makes: 10 panna cotta

    • 1/4 cup water
    • 3 1/2 teaspoons powdered gelatine
    • 3 1/4 cups thickened cream
    • 3/4 cup icing sugar, sifted
    • 3 teaspoon matcha powder
    • 10 raspberries
    • 1/4 cup whipped cream
    • 20 mint leaves
    • icing sugar, for dusting

    1. Place the water in a bowl and sprinkle over the gelatine. Set aside for 3 minutes.
    2. Place the cream, icing sugar and matcha powder in a saucepan over medium- low heat and simmer, stirring occasionally, for 5 minutes.
    3. Add the gelatine mixture and cook, stirring, for 3 minutes.
    4. Pour the mixture into 10 x 100g capacity glass containers and refrigerate for 4-5 hours or until set.
    5. Top with whipped cream, raspberry, mint and dust with icing sugar.
