Potato Salad with Lemon Vinaigrette

    This is a simple and economical potato salad recipe that is the perfect accompaniment to meat or fish. Red potatoes are combined with a lemon-garlic vinaigrette.

    Serves: 4 

    • 6 red potatoes, cubed
    • 4 tablespoons olive oil
    • juice of 1 lemon
    • 1 tablespoon red wine vinegar
    • 1 tablespoon garlic, minced
    • 2 tablespoons fresh parsley, chopped
    • 2 tablespoons sugar
    • salt and pepper, to taste
    • 2 spring onions, thinly sliced

    1. Boil the potatoes in salted water for 12 minutes, or until just done but still firm. Drain and let cool.
    2. In a small bowl, whisk together the olive oil, lemon juice, vinegar, garlic, parsley and sugar. Place the potatoes in a salad bowl and toss with the vinaigrette, adding salt and pepper to taste.
    3. Sprinkle with spring onions just before serving.
