Serves: 2
- 2 chicken breasts
- 2 long rashers bacon
- 1 teaspoon olive oil
- 100g button mushrooms, halved
- 1 clove garlic, thinly sliced
- 1 sprig of thyme, leaves removed from stem
- pepper to taste
- 1 tablespoon plain flour
- 1/2 cup chicken or vegetable stock

- Wrap chicken breasts in bacon slices and secure with toothpicks or kitchen string.
- Place oil into a non-stick fry pan and once heated begin to cook chicken on medium heat for 5 min each side or until nearly cooked through.
- Add mushrooms, garlic and thyme to pan with chicken and fry till mushrooms are tender, turning chicken regularly. Season with pepper.
- Remove chicken from pan and set aside. Add flour to pan and, on low heat, stir to coat remaining ingredients then cook for 2 minutes.
- Add stock to pan and continuously stir until thickened to a gravy consistency, then remove from heat.
- Remove toothpicks from chicken and serve alongside some steamed vegetables. Pour over the mushroom and thyme sauce.
