Bacon Wrapped Chicken Breast with Garlic, Mushroom and Thyme Sauce

    Serves: 2 

    • 2 chicken breasts
    • 2 long rashers bacon
    • 1 teaspoon olive oil
    • 100g button mushrooms, halved
    • 1 clove garlic, thinly sliced
    • 1 sprig of thyme, leaves removed from stem
    • pepper to taste
    • 1 tablespoon plain flour
    • 1/2 cup chicken or vegetable stock

    1. Wrap chicken breasts in bacon slices and secure with toothpicks or kitchen string.
    2. Place oil into a non-stick fry pan and once heated begin to cook chicken on medium heat for 5 min each side or until nearly cooked through.
    3. Add mushrooms, garlic and thyme to pan with chicken and fry till mushrooms are tender, turning chicken regularly. Season with pepper.
    4. Remove chicken from pan and set aside. Add flour to pan and, on low heat, stir to coat remaining ingredients then cook for 2 minutes.
    5. Add stock to pan and continuously stir until thickened to a gravy consistency, then remove from heat.
    6. Remove toothpicks from chicken and serve alongside some steamed vegetables. Pour over the mushroom and thyme sauce.
