Pears Poached in Wine

    Pears are poached in red wine, orange and cinnamon. This pear dessert is the perfect way to use up slightly hard pears.

    Serves: 4 

    • 4 large, firm pears
    • 100g caster sugar
    • 1 stick cinnamon
    • peel of 1 orange, organic for preference
    • 1 (750ml) bottle red wine

    1. Peel the pears and cut them into quarters lengthways then remove the cores. You can also leave them whole with the stem on for a different presentation.
    2. Place the pears in a saucepan and add the caster sugar, cinnamon stick and orange peel. Pour in the wine to cover. Bring to the boil, reduced heat and simmer gently about 2 1/2 hours until completely soft and red all the way through. The firmer the pears, the longer the cooking time required.
    3. Remove pears from the cooking liquid with a slotted spoon. Serve with ice cream and some of the cooking liquid.

    Very similar to my Dutch mother’s recipe! I added 1 tsp ginger and 1 tsp cloves. I used unripe Bosc pears. Simmering time would need to be reduced with ripe pears (my mother only simmers for 20 min).  -  18 Nov 2018  (Review from Allrecipes USA and Canada)
