Peel the pears and cut them into quarters lengthways then remove the cores. You can also leave them whole with the stem on for a different presentation.
Place the pears in a saucepan and add the caster sugar, cinnamon stick and orange peel. Pour in the wine to cover. Bring to the boil, reduced heat and simmer gently about 2 1/2 hours until completely soft and red all the way through. The firmer the pears, the longer the cooking time required.
Remove pears from the cooking liquid with a slotted spoon. Serve with ice cream and some of the cooking liquid.
