Apple Sauce Oat Cookies

    These cookies are delicious - spiced with cinnamon, nutmeg and cloves. The secret ingredient is apple sauce which gives a good flavour and keeps them soft and sweet.

    Makes: 50 cookies

    • 65g butter, softened
    • 125g margarine
    • 1 1/4 cups brown sugar, packed
    • 3/4 cup white sugar
    • 2 eggs
    • 1 1/4 cups apple sauce
    • 1 1/2 teaspoons vanilla extract
    • 3 cups (375g) plain flour
    • 1 teaspoon bicarb soda
    • 1/2 teaspoon salt
    • 2 teaspoons ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/4 teaspoon ground cloves
    • 3 cups quick oats
    • 1 cup dried apple, chopped
    • 1 cup raisins

    1. Preheat oven to 180 degrees C.
    2. With an electric mixer cream butter, margarine and sugars until light and fluffy. Add the eggs, apple sauce and vanilla then beat until smooth.
    3. In a different bowl combine flour, bicarb soda, salt, cinnamon, nutmeg and cloves. Add to creamed mixture and stir until a soft dough forms. Mix in the oats, dried apple and raisins.
    4. Use a tablespoon to drop balls of the dough 5cm apart on ungreased baking trays. Bake 12 minutes. Cool on wire racks.
