Tuna and Chickpea Salad

    This is a quick and easy meal I made which what I had in the pantry. It would also be good with boiled cubed potato in place of the chickpeas.

    Serves: 2 

    • juice of 1/2 lemon
    • 2 teaspoons extra virgin olive oil
    • 1 anchovy, minced
    • 1 (110g) tin tuna in oil
    • 1 green onion, finely sliced
    • 1 (400g) tin chickpeas, drained and rinsed
    • a few fresh basil leaves
    • 1/4 iceberg lettuce, chopped
    • salt and pepper, to taste

    1. In a bowl, mix the lemon juice, olive oil and the anchovy. Add the tuna and shred it a bit with a fork.
    2. Add all the remaining ingredients, season with salt and pepper to taste and toss to mix.
