Fry chorizo in a small frypan on medium heat till browned and crispy. Add diced onion and crushed garlic to chorizo and cook until onion is translucent, then transfer to a bowl and combine with tasty cheese. Set aside.
Place mince, paprika, cayenne pepper, parsley and bread crumbs in a bowl and mix well to combine, then divide mixture into eight. Roll into balls and flatten down mixture to form a thin patty.
Place a heaped tablespoon of the chorizo mixture into the centre of four of the eight patties. Place the remaining four patties on top of the other four patties and using wet hands, seal sides together to form four larger sized patties, keeping the chorizo mixture inside and completely covered by mince mixture.
Heat oil in a frypan over medium heat and fry burger patties for 5 minutes each side or until golden and cooked through.
Remove from heat and serve on rolls with some leafy greens, tomato and aioli.
Bread crumbs can be easily made by pulsing a stale slice of bread in a food processor until it becomes fine crumbs.
