Never Fail Microwave Hollandaise Sauce

    Serves: 2 

    • 150g butter (melted)
    • 2 egg yolks
    • 1 1/2 teaspoon water
    • 1 tablespoon lemon juice
    • salt and pepper to taste

    1. Melt butter in a microwave.
    2. Place egg yolks, water and lemon juice in a microwave proof bowl (I like to use a container with a handle).
    3. Using a hand held electric mixer, whisk the ingredients.
    4. Place into microwave at 50% for approx 15 seconds.
    5. Remove and whisk, repeat a further 2 times.
    6. If the mixture looks like "cooked egg" on the top, do not put into microwave again. Just whisk the mixture. It will be nice and thick.
    7. Slowly add the butter to the mixture and whisk with the mixer.
    8. Taste the final product, then add salt and pepper to taste.
    9. Serve atop poached eggs, salmon, or drizzled on asparagus.
