Cumin and Paprika Fried Fish

    This lovely fried fish is pan fried, not deep fried, cutting down on the amount of oil required. It is spiced with coriander, cumin and paprika.

    Serves: 4 

    • 1/3 cup (50g) plain flour
    • 1 teaspoon ground coriander
    • 1 teaspoon ground cumin
    • 1 teaspoon sweet paprika
    • 1/2 teaspoon salt
    • 4 firm white fish fillets, about 200g each
    • oil, for frying
    • lemon wedges, to serve

    1. Mix the flour, spices and salt together. Cut the fish into 10cm pieces and coat with the spice mix, shaking the excess away.
    2. Heat a heavy frying pan over medium high heat. Add a splash of oil.
    3. Fry the fish 4 minutes, or until golden brown. Flip and cook the other side 2-3 minutes, adding more oil if necessary. Serve with lemon wedges.
