My Greek Salad

    You don't want to get too complicated with a Greek salad. Leave out the lettuce, and top with a big chunk of feta to crumble as you eat.

    Serves: 4 

    • 4 tomatoes
    • 1 cucumber (unpeeled)
    • ` 1 green capsicum
    • 2 tablespoons Greek olive oil
    • 1 tablespoon lemon juice or red wine vinegar
    • sea salt and pepper
    • 200g feta cheese in one big slice
    • 20 kalamata olives
    • 1 red onion, sliced into rings
    • 1 teaspoon fresh oregano, chopped
    • 1/2 teaspoon dried oregano

    1. Cut the tomatoes into wedges. Cut the cucumber in half lengthways and roughly slice. Cut the capsicum into thin strips. Combine and toss with the olive oil, lemon juice or vinegar, sea salt and pepper.
    2. Top with the feta cheese in one big piece and sprinkle with kalamata olives, onion rings and the herbs.
