Rice Salad with Almonds, Spinach and Yoghurt

    This is a good rice salad which is the perfect complement to spicy food. I make it whenever I cook cevapcici sausages.

    Serves: 6 

    • 2 cups long grain rice, cooked and drained
    • 5 handfuls spinach, shredded
    • 1 bunch flat leaf parsley, chopped
    • 1/2 cup green peas, cooked
    • 1/2 cup toasted almonds
    • 1/2 red onion, sliced
    • 3/4 cup plain yoghurt
    • 1 lemon, juiced
    • 100ml extra virgin olive oil
    • sea salt and freshly ground pepper
    • toasted almonds, crushed, to garnish

    1. Place the cooked rice in a large bowl. Add spinach, parsley, peas, almonds, onion and stir well.
    2. Combine yoghurt, lemon juice and olive oil in a small bowl. Season to taste. Stir until smooth and pour over the rice mixture. Top with crushed almonds.

    Using leftover rice meant I varied the quantities a bit and next time I will add more peas and spinach. Lovely fresh tasting recipe and really easy.  -  06 Feb 2014
