Roasted Nectarines with Mascarpone

    This is a creamy and decadent dessert that works equally well with other fruit such as apricots, peaches or fresh figs.

    Serves: 4 

    • 4 nectarines, cut in quarters
    • 1 tablespoon raw sugar
    • 2 tablespoons caster sugar
    • 2 egg yolks
    • 200g mascarpone
    • 30ml brandy or cognac

    1. Preheat the oven to 200 degrees C.
    2. Place nectarines on a baking tray, spinkle with raw sugar and roast 15-20 minutes or until lightly golden.
    3. Meanwhile, whisk the caster sugar and yolks with an electric mixer until light and creamy, at least 10 minutes.
    4. Add the mascarpone and brandy and stir with a wooden spoon until combined. Refrigerated until needed. Serve spooned over the roasted nectarines.
