    The charm of this salad is it is so bright and fresh, it's ideal served along with spring lamb. Unlike most salads the dressing is better added about an hour in advance so the flavours can seep in.

    Ingredients
    Serves: 4 

    • 3 large tomatoes, peeled, deseeded and diced
    • 1/2 large cucumber, peeled and diced
    • 4 radishes, diced in 1cm pieces
    • 4 spring onions, finely chopped
    • 3 mild green chillies, finely chopped
    • 10 sprigs flat-leaf parsley, finely chopped
    • 10 green olives, pipped and roughly chopped
    • For the dressing
    • 1/3 cup olive oil
    • 1/2 lemon, juiced
    • 1 tablespoon white wine vinegar
    • pinch salt
    • black pepper

    Directions

    1. Mix all the ingredients in a bowl. Whisk up the dressing and pour over the salad. Leave for an hour in the fridge if possible, then check the taste and add a little more salt if necessary.
