Delicious Coconut Ice

This is a beautiful recipe that my grandma gave to me which is both delicious and easy. Please give it a go!

Ingredients
Makes: 1 batch coconut ice
- 750g icing sugar
- 250g coconut
- 400g can condensed milk
- 1 teaspoon vanilla essence
- pink food coloring

- Sift icing sugar into a bowl, add coconut and vanilla essence, mix well.
- Add condensed milk, mix well.
- Press half mixture into a greased and lined 20cm (8in) slab tin.
- Color the remaining half with the pink food coloring and press evenly on top of white.
- When set, remove from tin, cut into squares.
- Enjoy!
Tip
When setting the coconut ice you can either put into fridge to set or leave it on a bench.
