Ricotta and Basil Panini

    This is a non-toasted panini with a filling of mashed ricotta, pine nuts, basil and tomatoes. A great quick and easy lunch.

    Serves: 4 

    • 1 long ciabatta or baguette
    • 250g ricotta
    • 1 tablespoon grated parmesan
    • 1 tablespoon pine nuts, toasted in the oven
    • salt and ground pepper to taste
    • 1 tablespoon extra virgin olive oil
    • a few basil leaves, torn
    • 3 ripe tomatoes

    1. Slice the bread stick in half lengthways. With a fork, break up the ricotta and mix in the parmesan, pine nuts, salt and pepper and olive oil.
    2. Spoon the ricotta mixture over one half of the bread, scatter over the basil leaves and top with sliced tomatoes. Sprinkle a little salt over the tomatoes.
    3. Top with the other half of the bread and cut into 4 portions.
