BBQ Salmon with Fresh Salsa

    A really spectacular barbecue with almost no effort. A big bbq salmon fillet makes a dramatic presentation and is well complemented by a simple salsa.

    Serves: 4 

    • 2 large tomatoes, cored
    • 1/2 white onion, minced
    • 1/4 jalapeno chilli, minced
    • 1/2 cup coriander, chopped
    • juice of 3-4 limes, to taste
    • salt and freshly ground black pepper to taste
    • 1 salmon filled, about 750g (skin on if possible)
    • 2 tablespoons vegetable oil

    1. Fire up the barbecue and put the rack about 10cm from the coals.
    2. Chop tomatoes and combine with onion, chilli, coriander, lime juice and salt to taste. Set aside.
    3. Rub the salmon with a little oil and sprinkle with salt and pepper. Put it on the barbecue grill skin side down and let sit 4-5 minutes then turn and cook 3 minutes more - don't overcook.
    4. Serve with the salsa.
