This is a very simple vegetarian main dish which is super quick to make. Serve with cous cous and some plain yoghurt if you like.

Serves: 2 

  • olive oil
  • 1 onion, chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin
  • 1 tablespoon curry paste, or to taste
  • zucchini, brocolli, capsicum - whatever veg you have to hand
  • 400g tin chickpeas
  • 900g tin chopped tomatoes

Preparation:5min  ›  Cook:25min  ›  Ready in:30min 

  1. Heat the olive oil in a deep saucepan and saute the onion for a couple of minutes. Add the spices, curry paste and vegetables.
  2. Add the chickpeas and tomatoes, and simmer fifteen minutes.
