Chicken and Chorizo Hotpot

This is a simple and forgiving one pot meal and you can alter the ingredients as desired, for example add mushrooms instead of capsicum.

Serves: 6 

  • 1 chicken, cut into 8 pieces
  • 1 chorizo sausage, cut into 1cm slices
  • 1 clove garlic, crushed
  • 1/2 onion, thinly sliced
  • 1 red capsicum, sliced
  • 1 yellow capsicum, sliced
  • 1 tin Italian tomatoes, chopped
  • 1/4 cup white wine
  • salt and pepper
  • 3 bay leaves
  • small handful black olives
  • 3 tablespoons olive oil

  1. Preheat oven to 200 degrees C.
  2. In a large baking dish, place the chicken, sausage, garlic, onion, capsicum, tomato and white wine. Season with salt and pepper and toss to mix.
  3. Arrange the chicken so it is skin side up. Add the bay leaves and olives and drizzle over the olive oil. Cook in the oven 1 1/2 hours. Serve with crusty bread.
