On choy, also known as water spinach, is a very popular ingredient in Southeast Asian cuisine. You can find it an Asian shops. Here it is stir fried with shiitake mushrooms for a delicious side dish.

Serves: 4 

  • 1 1/2 tablespoons vegetable oil
  • 1 teaspoon sesame seeds
  • 2 cloves garlic, sliced
  • 100g fresh shiitake mushrooms, stemmed and sliced
  • 1 bunch on choy, trimmed, washed and cut into lengths
  • 1 1/2 tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon water

  1. Heat 1 tablespoon oil in a wok and cook sesame seeds 1 minute or until golden. Remove with a slotted spoon and set aside. Add garlic and stir fry for 1 minute until aromatic. Remove the garlic and set aside.
  2. Add the remaining oil to the wok and heat until hot. Add the mushrooms and stir fry 2-3 minutes or until tender.
  3. Add the on choy to the wok and stir fry 2-3 minutes or until just wilted. Add the sesame seeds, garlic, oyster sauce, sesame oil and water and toss to coat the on choy. Serve as a side dish with rice.
