Sumac is a very popular Middle Eastern spice with a slight lemony flavour so it goes well with fish. You can find it at Middle Eastern grocery shops.

Serves: 4 

  • 4 blue eye fillets, boned
  • 3 tablespoons sumac
  • 1/2 fresh coriander leaves
  • 200ml olive oil
  • lemon wedges, for serving

  1. Sprinkle the fish with sumac and press it in to coat. Place the fish in a shallow dish. Sprinkle with coriander and drizzle over the olive oil. Let marinate at least an hour.
  2. Preheat the oven to 180 degrees C. Sear the fish on both sides in a frying pan then transfer to an ovenproof dish.
  3. Bake 5-10 minutes, or until just cooked through. Do not overcook. Serve with lemon wedges.
