Sweetcorn Fritters

    These simple sweetcorn fritters are ideal with a fresh mango salsa. Use fresh corn off the cob, not tinned, for best results.

    Makes: 12 fritters

    • 2 2/3 cups (about 520g) fresh corn kernels, cut off the cob
    • 1 small red onion, chopped
    • 2 eggs
    • 1/2 cup chopped coriander leaves
    • 1 cup (125g) plain flour
    • 1 teaspoon baking powder
    • sea salt
    • freshly ground black pepper
    • vegetable oil, for frying

    1. Preheat oven to 120 degrees C.
    2. Place two cups of the corn kernels and the onion, eggs, coriander, flour, baking powder, salt and pepper in a food processor and process until combined. Place in a large bowl, add the remaining corn and stir to combine.
    3. Heat one tablespoon of the vegetable oil in a non-stick frypan over medium high heat. When the oil is hot, drop two tablespoons of mixture per fritter in the pan and cook in batches of three for 1 minute each side.
    4. Drain on paper towels and keep warm in the oven while you make the rest of the fritters.

    So simple! I used frozen corn as I had no fresh. My 5 year old loves them. I love a blob of sweet chilli sauce and sour cream on the side to dip them in. Fab recipe. :-)  -  14 Apr 2015
