Kingfish and Green Mango Salad

    This is a Thai-style seafood salad which is based on kingfish and green mangoes. The dressing contains coriander, ginger and chilli.

    Serves: 4 

    • For the fish
    • 1 cup miso paste
    • 1 teaspoon white sugar
    • 1 teaspoon white pepper
    • 4 kingfish fillets, about 200g each
    • For the dressing
    • pinch sea salt
    • 3 large green chillies, seeded
    • 2 stalks coriander, roots included
    • 2 cloves garlic
    • 1cm piece of fresh ginger, sliced
    • 100ml lime juice
    • 50ml fish sauce
    • 1 teaspoon white sugar
    • For the salad
    • 1/2 cup onion shallots, sliced
    • 2 green mangoes, peeled and sliced
    • 1/4 cup kaffir lime leaves, sliced
    • 1 cup coriander leaves
    • 1 cup mint leaves
    • 1/4 cup lemongrass, finely sliced

    1. To make the dressing, place the salt, chillies, coriander stalks, garlic and ginger in a food processor and whizz into a paste. Add the lime juice, fish sauce and sugar then combine well.
    2. For the fish, combine the miso paste, sugar and pepper and coat the fish well. Cover and refrigerate for 30 minutes. Remove and leave to dry out slightly.
    3. Grill the fish for a few minutes, making sure not to overcook it. Combine all the salad ingredients. When cool, break up the fish and add to the salad and toss with the dressing.
    4. Serve with rice.
