Orzo is rice-shaped pasta which you can find at almost all supermarkets. I find it makes a nice change from ordinary rice.

Serves: 6 

  • 1 1/2 cups orzo
  • 2 lemons, zested and thinly sliced
  • 1/2 cup chopped fresh parsley
  • 3 cloves garlic, crushed
  • 1 teaspoon Tabasco
  • 3 eggs, beaten
  • 150g haloumi cheese, chopped
  • salt and pepper
  • oil for frying

Preparation:5min  ›  Cook:40min  ›  Ready in:45min 

  1. Cook orzo in boiling salted water for 10 minutes or until just tender. Drain and cool. Place orzo in a bowl with remaining ingredients (except oil) and combine well.
  2. Heat frying pan, add a little oil and dry 2 tablespoons of mixture in batches, about 3 minutes per side. Drain on paper towels. Serve with a green salad and a chutney on the side.
