Lentil Chicken Soup

This is an unusual chicken soup in that it contains whole chicken drumsticks. It is super simple to make and so good.

Serves: 6 

  • 1/2 teaspoon saffron threads
  • 1/4 cup boiling water
  • 6 chicken drumsticks
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 3 tablespoons grated fresh ginger
  • 2 (400g) tins chopped tomatoes
  • 1/2 cup green lentils
  • 4 cups chicken stock
  • 1/3 cup rice
  • 1 lemon, juiced
  • salt and pepper
  • 1/2 cup chopped coriander

  1. Combine the saffron threads and boiling water and let steep for 5 minutes.
  2. In a large saucepan, brown the chicken drumsticks in a little oil 1-2 minutes each side, then remove and set aside. Add the onion and garlic to the pan and cook over low heat 5 minutes.
  3. Add ginger, saffron water, tomatoes, lentils, stock and the drumsticks. Bring to the boil, simmer 15 minutes. Add rice and simmer another 15 minutes.
  4. Stir in lemon juice and season to taste with salt and pepper. Garnish with coriander when serving.
