Curried Parsnip Soup

    Parsnips are super delicious in this soup which is vegetarian and quick to make. Use the best quality curry powder, it really makes a difference.

    Serves: 4 

    • 1 tablespoon extra virgin olive oil
    • 1 tablespoon butter
    • 8 onion shallots, peeled and sliced
    • 3 large parsnips, chopped
    • 2 tablespoons curry powder
    • 5 cups milk
    • salt and freshly ground black pepper to taste
    • 1 tablespoon coriander leaves

    1. Heat the oil and butter in a saucepan, add the onion shallots and cook until soft, then add parsnips and curry powder and cook 5 minutes.
    2. Add the milk and bring to a gentle simmer (don't let it boil). Let simmer 30 minutes.
    3. Puree the soup in a blender or with a hand-held mixer. Reheat, adjust seasoning and garnish with coriander.
