Haloumi Bread Salad

This is a take on an Italian bread salad called panzanella. Traditionalists won't approve of the addition of cheese but it's delicious!

Serves: 2 

  • 4 thick slices crusty bread
  • 1/2 Spanish onion, roughly chopped
  • 1 Lebanese cucumber, roughly chopped
  • 1 large tomato, roughly chopped
  • splash olive oil
  • splash red wine vinegar
  • salt and freshly ground black pepper to taste
  • 8 basil leaves, torn
  • 8 (1/2cm thick) slices haloumi cheese

Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

  1. Tear the bread into rough lumps and place in a large bowl with the onion, cucumber and tomato. Add a splash of olive oil and vinegar and season with salt and pepper. Mix and sprinkle the basil over the top.
  2. Heat a little olive oil in a frying pan and then add the cheese. Turn when it forms a crust and cook the other side.
  3. Serve the salad on plates and top with the haloumi and a drizzle more olive oil.
