Place the pork roast in the roasting pan, fat side down.
Rub: Combine the rub ingredients well then spread evenly over the pork roast. Place in the oven at 110 degrees C. Cook slowly at this low temperature for 4 hours.
Glaze: Combine the sauce ingredients well then baste over the pork roast using half the mixture. Cook for another 30 minutes, then baste using the second half. Turn the oven up to 160 degrees C and cook for an additional 30 minutes.
Remove from the oven and let rest for between 15 and 30 minutes. The meat should be very soft and falling apart. This cooking method is designed to be served by pulling the meat apart not by slicing.
