Crispy Prawn and Noodle Salad

    A super easy salad to make especially if you buy your king prawns already peeled and butterflied. Tangy and full of flavour.

    Serves: 4 

    • 24 king prawns, butterflied
    • 150g crispy noodles
    • 2 cups baby spinach leaves
    • 1 cup mung bean sprouts
    • dressing
    • 1/4 cup sweet chilli sauce
    • 1/4 cup light soy sauce
    • 3 limes, juiced
    • extra lime wedges, to serve

    1. Cook prawns in 4cm simmering salted water 1-2 minutes. Remove and set aside to cool.
    2. Place noodles, spinach, bean sprouts and prawns in a bowl. To make the dressing, mix sweet chilli sauce, soy sauce and lime juice in a separate bowl. Pour dressing over salad and toss well. Serve with lime wedges.
