Morrocan Lamb Chops

    Lamb chops sauteed with onions and spices then simmered with tomatoes and raisins is very Moroccan. Serve with boiled rice.

    Serves: 4 

    • 4 lamb chump chops
    • olive oil
    • 2 onions
    • 3 cloves garlic
    • 1/2 teaspoon chilli powder
    • 1 1/2 teaspoon turmeric
    • 1/2 can chopped tomatoes
    • 1 cup raisins
    • 1 teaspoon salt
    • 1/4 cup toasted almonds
    • chopped parsley

    1. Cut the lamb chops into cubes. Heat olive oil in a heavy saucepan, add the lamb, onions and garlic, then the chilli and turmeric. Brown the lamb well.
    2. Add the tomatoes and raisins. Cover and simmer until the lamb is tender. Finally add salt to taste, then sprinkle with almonds and parsley.
