Homemade tomato soup is so much better than the tinned stuff and nothing could be easier to make. You can peel the tomatoes if you like but I don't find it necessary.

Serves: 4 

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 2 cloves garlic, chopped
  • 750g ripe tomatoes, quartered
  • 1 (400g) tin chopped tomatoes
  • 4 cups (1 litre) vegetable stock
  • 1 cup (250ml) water
  • salt and freshly ground black pepper
  • fresh basil, to garnish

Preparation:15min  ›  Cook:40min  ›  Ready in:55min 

  1. Heat the olive oil in a large saucepan. Saute the onion, carrot and garlic, stirring occasionally, for five minutes.
  2. Add the quartered ripe tomatoes and cook 4 minutes. Add the tin of chopped tomatoes, the chicken stock and water. Bring to the boil, reduce heat and simmer 30 minutes.
  3. Remove from heat and allow to cool a little. Puree the soup in a blender or with a hand held blender. Season with salt and pepper. Reheat if necessary and serve hot, garnished with chopped basil.
