A really nice and simple lunch for two, penne is combined with two cheeses, fresh herbs and peas then baked in ramekins.

Serves: 2 

  • 2 cups penne, cooked
  • 40g feta, crumbled
  • 40g grated parmesan
  • 1 cup peas, boiled until tender
  • 2 tablespoons chopped mint
  • 2 tablespoons chopped parsley
  • 200ml cream
  • salt and black pepper to taste
  • extra grated parmesan

Preparation:20min  ›  Cook:10min  ›  Ready in:30min 

  1. Preheat the oven to 200 degrees C.
  2. In a large bowl, combine the pasta, cheeses, peas, mint, parsley and cream. Season to taste.
  3. Divide the pasta into two small oven-proof ramekins, sprinkle with the extra parmesan and bake 10 minutes.
