Rice Paper Rolls with Herbs

    Rice paper rolls are easy to make and just delicious! You can easily buy the rice paper rounds in Asian shops and some supermarkets.

    Makes: 12 rolls

    • 150g green beans
    • 12 rice paper rounds
    • 1/2 cup basil leaves
    • 1/2 cup mint leaves
    • 1/2 cup coriander leaves
    • 2 carrots, cut into thin strips
    • dipping sauce
    • zest of two limes
    • juice of four limes
    • 2 tablespoons sugar
    • 2 tablespoons vinegar
    • 2 tablespoons water
    • 1 tablespoon fresh mint, sliced thinly
    • salt

      To make the rolls:

    1. Cook the beans in boiling salted water for two minutes, or until just tender. Drain and shock with cold water.
    2. Dip each rice paper round into cold water to soften it. Lay a piece of rice paper on a clean cloth and fold in half. Place a mixture of herbs, a couple of beans and a few carrot strips on to each. Fold in one edge and roll up tightly, leaving one end open.
    3. To make the dipping sauce:
