Lovely tender bok choy is prepared simply with spices as a good vegetarian side dish. Eat simply with rice or as part of a larger meal.

Serves: 5 

  • 1 tablespoon sesame oil
  • 1 teaspoon cumin seeds
  • 1 clove garlic, sliced thinly
  • 1 teaspoon ginger, minced
  • 1/4 fresh chilli, sliced
  • 2 ripe tomatoes, cut into wedges
  • 2 bunches bok choy, sliced and washed
  • 1 teaspoon sea salt
  • 1 tablespoon coriander leaves
  • lime wedges

Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

  1. Heat the sesame oil in a large frying pan. Add the cumin seeds and allow them to pop. Quickly stir in the garlic, ginger and chilli. When they smell aromatic, toss in the tomatoes and the wet bok choy. Sprinkle with salt. Cover and let cook 3-4 minutes until wilted.
  2. Serve garnished with coriander and with lime wedges on the side.

healthy, yummy vegetable dish. didn't really taste the cumin, but then, they never really pop in my pan either, maybe i didn't wait long enough. - 03 May 2014
