Chocolate, Date and Walnut Slice

A lovely chocolate slice with espresso coffee, walnuts and dates. It has quite a dense brownie-like texture.

Makes: 1 cake

  • 1/2 cup (80g) chopped dates
  • 1/4 cup (60ml) strong espresso
  • 2/3 cup (100g) plain flour
  • 2 tablespoons cocoa powder
  • 80g butter, softened
  • 1 cup (220g) caster sugar
  • 2 eggs
  • 1/3 cup (40g) chopped walnuts
  • icing sugar, for dusting

  1. Grease a 20cm square cake tin then line with baking paper. Preheat the oven to 160 degrees C.
  2. Place dates and espresso in a small saucepan over low heat and simmer five minutes, or until dates are soft and most of the coffee has evaporated. Let cool.
  3. Sift flour and cocoa together in the bowl of an electric mixer. Add butter, sugar and eggs and beat for 5 minutes, scraping down the sides as necessary. Stir in the walnuts and dates.
  4. Spoon the batter into the cake tin and bake 25-30 minutes, or until a skewer comes out clean. Allow to cool in the cake tin before cutting into squares and dusting with icing sugar.
