Chocolate, Date and Walnut Slice
A lovely chocolate slice with espresso coffee, walnuts and dates. It has quite a dense brownie-like texture.

Makes: 1 cake
1/2 cup (80g) chopped dates
1/4 cup (60ml) strong espresso
2/3 cup (100g) plain flour
2 tablespoons cocoa powder
80g butter, softened
1 cup (220g) caster sugar
1/3 cup (40g) chopped walnuts
icing sugar, for dusting
- Grease a 20cm square cake tin then line with baking paper. Preheat the oven to 160 degrees C.
- Place dates and espresso in a small saucepan over low heat and simmer five minutes, or until dates are soft and most of the coffee has evaporated. Let cool.
- Sift flour and cocoa together in the bowl of an electric mixer. Add butter, sugar and eggs and beat for 5 minutes, scraping down the sides as necessary. Stir in the walnuts and dates.
- Spoon the batter into the cake tin and bake 25-30 minutes, or until a skewer comes out clean. Allow to cool in the cake tin before cutting into squares and dusting with icing sugar.

Used 175gm of soft brown sugar and added a small amount of crystallised ginger, finely chopped. The best cake I've made in a long time. Highly recommend.
